Salsa Chicken

3 - 5 chicken breast
1 jar of salsa
1 pkg taco seasoning
1/2 cup sour cream
Cheddar cheese

Put chicken in slow cooker, sprinkle with seasoning. Pour salsa over top & cover. Cook on high for 4 hour or until chicken can be shredded. Shred chicken, and turn to low. Add sour cream & cheese, and let cook another hour. Serve with beans & rice, or on tortillas.

Rice Pilaf

My Nana used to make this for us allllll the time when we were little. After she passed away, & my Papa sold the house, I got her dish she used to make this in & think of her & rice pilaf everytime I pull it down.

6 TBSP butter (I use margarine)
1 cup long grain rice
1 cup diced veggies (I used carrots, celery & onions)
2 cups water
4 tsp chicken stock
1/4 tsp thyme

Put the rice, veggies & butter into a casserole dish, & microwae on high for 3 - 4 mintues. Stir thourghly & add remaing ingredients. Microwave, covered, for 12 - 15 minutes, or until tender. Let sit for 5 minutes, stir & serve.

Spinach Salad

My new favorite summer salad!!

Spinach leaves
Sliced mushrooms
Diced strawberries
Sliced red onion
Can of mandarin oranges, drained
Cubes of mozza or Swiss cheese
Poppyseed dressing

Toss everything together & lightly coat with dressing. Super quick & SO yummy!!!!

Hot Pizza Dip

A great appetizer for a party, yummy with corn chips!!

8oz cream cheese
1 tsp Italian seasoning
1 cup shredded cheese
3/4 cup parm cheese
8oz pizza sauce
2 TBSP chopped green pepper
2 TBSP sliced green onion

Mix cream cheese & seasoning together, then spread in the bottom of a microwavable dish. Sprinkle half the cheeses, top with pizza sauce, remaing cheese, peppers & onions. Microwave on highg for 3 - 4 minutes, or until cheese is melted. Let stand for 3 minutes before serving.

Veggie Bars

This is from my sister in law, Melissa. It`s so yummy (and healthy!), and even my boys like it!!

8oz cream cheese
1/2 cup mayo
1 pkg Ranch powder
2 cans of crescents dough
Mixed veggies (carrots, broccoli, celery, carrots)
Shredded cheese

Flatten crescents onto cookie sheets & bake at 375* for 10 min or until lightly golden. Mix cream cheese, mayo & Ranch togehter, & spread on cooled dough. Sprinkle on veggies & cheese, then cut into bars.

Cheery, Chocolate Cherry Cookies

Mmmm. These are super yummy, moist cookies. They are PERFECT for Valentine's Day too! I just used a cherry chip cake mix I had in the cupboard, tossed in oil, eggs & vanilla, then chocolate chips, of couse. Sadly, I burnt the first 2 dozen :( But the good news is, I still have 2 dozen to enjoy!!

1 box Cherry Chip cake mix (I used Betty Crocker)
1/2 cup oil
2 eggs
1 TBSP vanilla
6 oz chocolate chips

Mix half of the cake mix with the oil, eggs and vanilla. Add remaing cake mix & stir in chips. Put a tablespoon of dough on cookie sheets, & and bake at 350F for about 8 minutes.
